COFFEE, DOUGHNUTS & PIE play a significant role in Twin Peaks. A 'damn fine cup of coffee' assures Agent Cooper that things will be OK no matter what. As the show progressed, coffee, doughnuts and cherry pie were always present and almost took on a role themselves.

Twin Peaks Inspired Cherry Pie Recipie for Lazy Pie Lovers

Cherry Pie

What You'll Need

  • 2 Cans of Tart Cherries (partially drained) or 600g frozen bagged cherries
  • 2 layers pre-made roll out pastry
  • 1.5 cups sugar
  • juice of 1/2 lemon
  • Teaspoon of Cinnamon
  • 1/4 cup water
  • Spoon of butter
  • 1/2 Spoon Almond extract

Method

  1. Line the bottom of an 8 inch pie tray with butter and place first layer of pastry on it, working it to shape of tray.
  2. Using a knife, cut the second layer into 1.5 inch strips and set aside - this will be the lattice top of the pie.
  3. Preheat oven to 200 degrees.
  4. In a saucepan on stovetop combine cherries with sugar, lemon, cinnamon and bit of water in saucepan and stir till gooey and bubbly. Add almond extract at end and set aside for a bit.
  5. Carefully pour cherry mixture into pie tray and arrange the pastry strips in lattice pattern on top, securing edges with botton layer pastry by pressing together.
  6. Trim excess pastry off edge and place in oven for 40-50 minutes. Allow to cool on countertop afterwards.

Serve with ice cream or cream or eat directly from tray with spoon - YOLO
